Stew Chicken with Pan Gravy Whisky Sauce

每次在 Italiannese 用餐时,我和老板都爱点他们的 Sizzling Roasted Chicken。这道菜的 pan gravy wine sauce 的美味真的让人无法抵挡,无论用面包醮着吃或配上意大利面都是那么的美味。pan gravy wine sauce融合了黑胡椒烤香的鸡胸肉,青红灯笼椒,干辣椒,马铃薯和葱头的精华,微辣和黑胡椒的香气,每一口都是无比的惊喜。

所以在机缘巧合下,我有所有的材料。但这儿没烤箱,就动动脑筋,改变了一下,自己尝试煮出这道美味的佳肴。卖相是不是蛮像  Italiannese 的 Sizzling Roasted Chicken 呢?

Stew Chicken with Pan Gravy Whisky Sauce

材料
鸡腿           1个(洗净,切块,以1汤匙酱油和些许黑胡椒腌制)
马铃薯       1个 (洗净,留皮,切块,撒上些许盐和黑胡椒)
青灯笼椒   1颗 (切片)
红灯笼椒   1颗 (切片)
干辣椒       3个 (热水浸软,去籽)
cili padi       2个(去籽)嗜辣的朋友可再加
大红葱头   1颗(切片)嗜辣的朋友可再加
蒜头           3瓣 (切片)
芫茜
黑胡椒

Pan Gravy Whisky Sauce
调味料:
橄榄油
水              一碗
酱油          2汤匙
盐              适量
黑胡椒      些许
Whisky      1汤匙

1. 热锅,下橄榄油,煎香青红灯笼椒片。
2. 加适量橄榄油,煎香马铃薯至金黄。
3. 将鸡腿块鸡皮面朝下,煎香逼出鸡油,翻转将鸡腿肉煎至7分熟。
4. 不用洗锅,保留香气,加入一点橄榄油煎和爆香大红葱头,蒜头,干辣椒和cili padi。
5. 锅中注入水,烧开后加入酱油和盐。
6. 加入煎香的马铃薯,青红灯笼椒片和鸡腿块;撒上些许黑胡椒,盖锅焖煮至酱汁浓稠。
7. 酱汁浓稠味道ok后,加1汤匙Whisky再焖煮片刻便可起锅。

Stew Chicken with Pan Gravy Whisky Sauce
1 drumstick (chopped and marinate with 1 T soy sauce and ground black pepper)
1 potato (cut into smaller pieces, sprinkle with some salt and ground black pepper)
1 green bell pepper (sliced)
1 red bell pepper (sliced)
3 dried chilies (seeded)
2 cili padi (seeded)
1 large red onion (peeled and sliced)
3 cloves of garlic (peeled and sliced)
some fresh coriander (chopped)

Pan Gravy Whisky Sauce
Olive oil
1 bowl of water
2 T soy sauce
Salt to taste
Ground black pepper
1 T Whisky

1. Heat the non-stick pan, fried the sliced green and red bell pepper with some olive oil.
2. With addition of some olive oil, friend the potatoes pieces to golden brown.
3. With the chicken skin side down, fried till medium cooked and skin golden brown.
4. Working with the same pan, add in some olive oil, saute the red onion, garlic, dried chilies, and cili padi till fragrant.
5. Pour in a bowl of water, bring to boil. Add in soy sauce and salt to taste.
6. Add in the green and red bell pepper, chicken, and potatoes. Sprinkle with some ground black pepper.
7. Covered the pan and stew till the gravy thickens.
8. Add in a little more salt to taste and 1T of Whisky, simmer for a while then it is ready to be served .
