Awww.....Roasted Chicken Again~

Well, it all started because of the preparation for the 清明节. It is my family turn to prepare all the stuffs these year and mum has been nagging me to try out roasted chicken recipe since early January this year, GOSH! finally, i only have time to try it out two months before the day. 


Garlic Flavoured Roasted Chicken (Version 1.0) 

Version 1.0, my very first trial, a more western taste of garlic roasted chicken! the roasted chicken taste so NATURAL, JUICY and such a nice garlic smell that my father and mummy couldn't resist themselves and start putting their hands on another pieces. the garlic spread really did the magic. the recipe my mum found was actually for roasted whole chicken. Since it is the first trial, i just baked two pieces of chicken wing and two pieces of drumsticks. It took nearly a day to marinate it and one hour for roasting in the oven, but we wallop up everything just within 10 minutes, lol~

Garlic Flavoured Roasted Chicken (Version 1.0 )

what you will need: cloves of garlic, onions, black pepper, salt, garlic spread, olive oil

1. Clean and dry the chicken wings and thighs.
2. Marinate it with finely chopped garlic and onion, sprinkle lots of black pepper and salt overnight in fridge. Try to massage these ingredient on the chicken and beneath the skin each time when you take out to turn over. Toss well with some olive oil.  (you may need to marinate with lots of salt to taste, maybe 2-3 Tbsp)
3. Clean away the garlic and onion, let dry.
4. Rub the chicken with lots of garlic spread (VIP)! these will create the nice garlic aroma! drizzle with some olive oil and roast for one hour in oven till golden brown at 180 degree Celcius.

Honey Roasted Chicken (Version 2.0)

To play safe, we decide to try out other method to see which recipe taste better, and here comes the Version 2.0 which is more asian style. When buying the chicken wings and thighs at the wet market with mum, an idea strike us: "why not make this as our dinner for Sunday night, it will be great!". And Tada~ Besides the roasted chicken, we had prepared more vege side dish! we have stir fried asparagus with carrot, fresh cherry tomatoes, stir-fried king oyster mushroom and baked potatoes. We love the baked potatoes so much and wish if only we had prepared more. Baked potatoes taste the best with the potato skin remains! As for the drink, it was radish and banana fruit juice. I love banana! Mummy can't take banana, so i made her carrot, orange radish juice.

P.S. finally we can have healthier western meal at home now after this. mummy used to prepare hot dog, fist fillet, chicken nugget, burger and hash browns whenever we have western meal as dinner >.< 


Honey Roasted Chicken.....asian style? (Version 2.0 )

what you will need: cloves of garlic, onions, salt, oyster sauce, soy sauce, dark soy sauce, honey, olive oil.

1. Clean and dry the chicken wings and thighs.
2. Finely chop the garlic and onion. Crush them and extract the juice.
3. Marinate the chicken with the juice extracted, add in some oyster sauce, soy sauce, dark soy sauce (for golden brown colour after roasted as you see in the picture) and salt overnight. Try to massage these ingredient on the chicken and beneath the skin each time when you take out to turn over. 
4. Before roasting, drain the chicken. Brush the chicken wings and thighs with honey and olive oil.
4. Roast for one hour in oven till golden brown at 180 degree Celcius.



Baked Potatoes

what you will need: salt, black pepper, olive oil, some fresh parsley.

1. Rinse and divide each potatoes to 6-8 parts.
2. Bring a pot of water to boil. Add in pinch of salt. Boil the potato for 5 minutes.
3. Drain the boiled potatoes. Sprinkle some black pepper and toss well with olive oil making sure all potatoes are covered with olive oil.
4. Bake the potatoes in oven till golden brown or as you prefered at 180 degree Celcius.
5. Toss well with some chopped fresh parsley before serve.    



Too bad we were too busy and tired preparing things on the day we go for 清明 till i forgotten to capture the Version 3.0 roasted chicken. it actually taste awesome, thanks to the marinating powder. However, my family final conclusion is, we prefer the Version 1.0 Garlic Flavoured Roasted Chicken, the more natural healthy flavour!

Verdict of the trial:

i don't think i will have any roasted chicken on my platter for few weeks from now.....just imagine the experience of gobbling up roasted chicken on alternate weekend for two months (T T)..though it really taste good, lol~

妈妈的最爱~Wholewheat Banana Nuts Loaf

My mummy always crave for the Signature Homemade Carrot Cake from The Coffee Bean and Tea Leaf, and claim that the one at MidValley branch is the best. The texture and the ingredient of the cake is just so rich! It would be even perfect if it is less sweet. 




 Wholewheat Banana Nuts Loaf


So, whenever i have the time to bake when back at home, i will try my best to prepare her favorite wholewheat banana nuts loaf. This is no ordinary banana cake as compared to those usually sell at the bakery or stalls. The skin of the banana loaf is a bit crunchy and you can either layered with chopped walnuts  or cashew nuts. Inside, the cake is just so moist and soft, packed with lots of chopped walnuts and the taste of cinnamon is just so good!  

I did improvise the recipe a bit, cutting down the castor sugar to just 90g and avoid the vanilla essence to make sure it is healthy, natural and not too sweet for my parents. I think i have made this cake more than 5 times since my first trial half year ago, which means nearly one loaf each month, lol~

My mummy will always eagerly walking in and out the kitchen peeping through the oven when the banana loaf is baking. Just imagine the feeling of being surrounding with warm banana and cinnamon smell, it was just so good to be at home! At this time, mummy will start to prepare her tea and waiting anxiously for her freshly baked banana loaf out from oven. She always haven't have enough for this cake and ask for more! 




Wholewheat Banana Nuts Loaf

What you will need:

115g butter
110g castor sugar (or 90g if you prefer not too sweet)
2 eggs
115g plain flour
55g wholewheat flour
1 tsp soda bicarbonate
1/8 tsp salt
1 tsp ground cinnamon
3 large ripe bananas
55g chopped walnuts
1 tsp vanilla essence (optional)

Preparation time: around 30 minutes.

1. Preheat oven at 170 deg C, line bottom and sides of loaf tin with greaseproof paper and grease the paper.
2. Cream the butter and sugar together until light and fluffy.
3. Add egg one at a time, beating well after each addition.
4. Sift the plain flour, soda bicarbonate, salt and cinnamon over the butter mixture and stir to blend.
5. Stir in the wholewheat flour.
6. Mash the bananas to a puree, stir into the mixture. stir in nuts and vanilla essence (optional).
7. Pour the mixture into prepared tin and spread level.
8. Bake until skewer/toothpick inserted in the centre comes out clean, 45-60 mins. let stand 10 mins before transferring to a rack.
