Lemon and walnut tea bread

家人吃腻了柠檬芝士蛋糕,而且芝士蛋糕好像对上了年纪的人没那么好, 所以就烘烤了这口味比较清爽的 Lemon and walnut tea bread。柠檬的抗癌功效在国外是街知巷聞地, 家家户户都会栽种一颗。我家有时也会将柠檬切片泡在水里, 不放糖。不妨试试, 可是不可喝过量, 因为饮用过量柠檬水会造成胃不适哦~




Lemon and walnut tea bread

Makes 1 loaf:

115g butter
100g sugar or 90g if prefer not so sweet
2 eggs, separated
grated rind of 2 lemons
2 T lemon juice
215g plain flour
2 tsps baking powder
125ml milk
55g walnuts, chopped
1/8 tsp salt

1. preheat oven at 170 deg C. line a loaf tin with greaseproof paper and grease.

2. with an electric mixer, cream the butter with sugar until light and fluffy.

3. beat in the egg yolks

4. add the lemon rind and just, stir until blended. set aside

5. in another bowl, sift together the flour and baking powder, 3 times. fold in butter mixture in 3 batches, alternating with milk. fold in walnuts. set aside.

6. beat the egg whites and salt until stiff peaks form. fold a large dollop of egg whites into the walnut mixture to lighten it. fold in the remaining egg whites carefully until just blended.

7. pour batter into prepared tin and bake for 45-50mins. let stand for 5 mins before turning out on to a rack to cool completely
