家人吃腻了柠檬芝士蛋糕,而且芝士蛋糕好像对上了年纪的人没那么好, 所以就烘烤了这口味比较清爽的 Lemon and walnut tea bread。柠檬的抗癌功效在国外是街知巷聞地, 家家户户都会栽种一颗。我家有时也会将柠檬切片泡在水里, 不放糖。不妨试试, 可是不可喝过量, 因为饮用过量柠檬水会造成胃不适哦~
Lemon and walnut tea bread
Makes 1 loaf:
115g butter
100g sugar or 90g if prefer not so sweet
2 eggs, separated
grated rind of 2 lemons
2 T lemon juice
215g plain flour
2 tsps baking powder
125ml milk
55g walnuts, chopped
1/8 tsp salt
1. preheat oven at 170 deg C. line a loaf tin with greaseproof paper and grease.
2. with an electric mixer, cream the butter with sugar until light and fluffy.
3. beat in the egg yolks
4. add the lemon rind and just, stir until blended. set aside
5. in another bowl, sift together the flour and baking powder, 3 times. fold in butter mixture in 3 batches, alternating with milk. fold in walnuts. set aside.
6. beat the egg whites and salt until stiff peaks form. fold a large dollop of egg whites into the walnut mixture to lighten it. fold in the remaining egg whites carefully until just blended.
7. pour batter into prepared tin and bake for 45-50mins. let stand for 5 mins before turning out on to a rack to cool completely

苹果果酱 Apple Jam
早餐时,家人都会吃抹了果酱的面包。所以我就想不如亲手制作天然的苹果果酱, 不含色素和防腐剂。然后我就到超级市场买了几粒新鲜的 Granny Smith 红苹果, 再花一点点时间就熬煮出了带有柠檬清爽微酸很香的果酱。抹面包或搅拌入优乳酪都适合。
苹果果酱 Apple Jam
材料:
苹果 500g(去皮净重)
Castor sugar 150g
Lemon juice 30g
清水 30g
1. 将苹果去皮去芯切成小扇形薄片。
2. 将Castor sugar和Lemon juice加入苹果片中,搅拌混合均匀,待放2个小时。
3. 将苹果片,柠檬汁和清水加入锅里用小火熬煮15-30分钟 (时间依苹果熟度和硬脆适当增加。 不时搅拌,避免烧焦。
4. 用铲子稍微捣烂苹果片使苹果胶质(会使果酱凝固的天然胶质)容易煮出来。
5. 果酱煮至苹果呈现透明状而果酱浓稠即可。
6. 待凉, 装进用滚水煮过和烤箱风干的玻璃瓶中, 保存在冰箱。
